Chicken Cordon Blue


Take large chicken breast and butterfly it (cut it almost in half, but leave one edge connected).  Put a 2 Tbsp of olive oil in a skillet.  Cook chicken for laying  flat for about 6-7 minutes on each side.  Remove from skillet.  Heat the oven to 400®.  Take the chicken and fold it back in half.  Add a thick slice of ham and a slice of gouda cheese to the middle.  Bake until the cheese is melted.
