Meatballs

 1 lb. ground beef

1/4 cup bread crumbs

1/2 tsp salt

1/8 tsp pepper

1 small onion, chopped

1 egg

1 tbsp oil

1. In a medium bowl, combine all incredients except oil, mix well. Shape into 1 1/2 to 2-inch balls.

2. Heat oil in large skillet over medium-high heat until hot. Add meatballs, cook 10-12 minutes or until thoroughly cooked, turning occasionally. Drain.

**You can also bake in oven at 400 for 15 minutes.

Chicken Marsala

2 Chicken Breasts, butterflied
salt and pepper
3 tbsp. butter, divided
2 tbsp. olive oil
7 (ish) Baby Bella Mushrooms
1 shallot, minced
1 tbsp. Flour
1 c. Marsala wine
1 c. Chicken stock

Season chicken with salt and pepper. Melt 1 1/2 tbsp butter and olive oil in skillet. Brown chicken 5 mins each side. Transfer to a plate.

Melt 1 1/2 tbsp. butter, saute mushrooms 5-7 mins, add shallots, cook 2-3 mins. Add flour, cook 3-4 mins. Pour wine into skillet, bring to boil, cook 3-4 mins. add chicken stock, cook 3-5 mins. Return chicken to skillet and cook about 10 mins.

Chocolate Chip Mini Cheesecakes

1 Pkg. Nestle Chocolate Chip Cookies (bar/squares)
2 Pkgs. Cream Cheese (softened)
3/4 C. Sugar
2 Tbsp. Flour
2 Eggs
1 tsp. Vanilla
1/2 C. Mini Chocolate Chips

Preheat oven to 325. Line 24 muffin cups. Place 1 cookie square into each cup. Bake 10 mins. or until cookie has spread to edge of cup.

Beat cream cheese, sugar, flour in large bowl until creamy. Add eggs and vanilla; mix well. Stir in 1/2 c. mini chocolate chips. Spoon 2 tbsp. of batter over each cookie.

Bake an additional 13-15 mins. or until just set, but not browned. Remove from oven to wire rack. Cool completely in pans. Refrigerate for 1 hour or overnight.

Pecan Pie

1 Pie crust
3 Eggs slightly beaten
1 cup Corn Syrup
2/3 C. Butter
1 tsp. vanilla
1 1/4 c. pecan halves

Place pie crust in pie pan.
For filling, combine eggs, corn syrup, sugar, butter and vanilla, Mix well, then stir in pecans.
Pour in pie shell.
Cover edges with foil. Bake at 350 for 25 mins. Remove foil, bake for 20-25 mins. more or until a knife inserted near center comes out clean. Cool on wire rack. Cover and refrigerate with 2 hours.

Pie Crust

5 1/2 C. All-Purpose Flour
2 tsp. Salt
1 lb. Butter
1 Tbsp. Vinegar
1 Egg lightly beaten
Cold Water

Mix together salt and flour.
Cut in butter until it looks like course oatmeal.
Combine vinegar and egg, add water to make 1 cup. Gradually stir liquid into dough mixture. Add only enough water to make dough cling together.
Gather into a ball and divide into 6 portions. If desired, wrap unused portions and refrigerate or freeze.

Jacob's Coconut Dream Bars

1 1/2 C. Flour
2 C. Packed Brown Sugar
1/2 C. Butter, softened
3 Eggs
1 tsp. Baking Powder
1 tsp. Vanilla
1/4 tsp. Salt
1 1/2 C. Coconut Flakes

Combine flour, 1/2 c. brown  sugar, and butter until particles are fine, use low speed on mixer. Press into bottom of greased 9x13 pan. Bake at 350 for 15 mins. Beat 1 1/2 c. brown sugar with eggs until just blended. Mix remaining ingredients. Spread over partially baked crust. Bake 20-25 mins or until golden brown. When cold, cut with sharp knife.

Hoppin John Soup

1 pound breakfast sausage
1/2 yellow or orange bell pepper, chopped fine
1/2 red bell pepper chopped fine
1/2 medium onion chopped
1/2 stick real butter
1 quart (box) chicken broth
1 1/2 cups cooked rice )
Greek Seasoning
Salt and Pepper to taste
2 Can black-eyed peas

Brown sausage in a large pot. Drain if necessary. Add peppers and onions and Saute'. Add chicken broth, black-eyed peas, rice and butter. Season with salt and pepper and sprinkle the entire top with greek seasoning.
