Red Beans and Rice


1 1lb. bag of dried small red beans

1 small onion

1 clove garlic

1 bay leaf

1 tsp thyme

1 tsp. crab boil

1 lb. smoked sausage

1 tsp. salt


Check the beans as they come out of the bag, they may contain dirt/rocks.  Empty the beans into a large soup pot.  Rinse them well.  Put about 6 cups of water in the pot.  Add sausage, onion, garlic, bay leaf, salt, thyme, and crab boil.  Cook on the stovetop for about 3 hours or until the beans are tender.  Stirring frequently will help thicken the beans.  Also, keep an eye on them and add more water if it gets
