Jambalaya

4 slices bacon
1 oinion, diced
1/2 green bell pepper, diced
1 stalk celery, diced
1 Lb. Smoked Sausage, sliced
3 cups, parboiled rice
1 tsp. Smoked paprika
1 tsp. Thyme
1 tsp. crushed red pepper
5 cups Chicken broth
1 C. tomato sauce
1 can Rotel
2-3 cups diced Chicken or Pork
3 Green onions, chopped

In a large, heavy bottomed pot, cook bacon until almost done. Add onion, cook until browned. Add bell pepper, celery and sausage, cook 3 mins. stirring often. Add all other ingredients and simmer 18 minutes or until rice is done.
